Why Treating Your Sourdough Culture Like A Pet Pays Off

Sam Ellis treats his sourdough culture like most people treat their pets.

"It's very temperamental. You've got to look after it and keep it well-fed, otherwise it can really go either way on you," the 32-year-old baker said.

"So you feed it once a day, it's used to it's feeding cycles, so you've got to be consistent. You put it in a temperature-controlled spot so it behaves the same each day. It definitely knows when it's going to get fed."
